This French restaurant is operated by an owner and chef from Iwaki City, who has served as a head chef at Ginza L’écrin. This is a natural French restaurant in which the chef selects the highest quality seasonal ingredients and customers can enjoy the Japan’s best. Kawamata Shamo (gamecock) is a favorite on the menu. Daiginjo Gensai Sake (top-quality sake brewed from rice grain milled to 50% or less) from Suehiro Sake Co., Ltd. is a prominent part of the wine list lineup.
When I heard the chef’s story, what I felt most was his passion for ingredients. The chef does not depend on general reputation but his own judgment. The item he keeps using is “Kawamata Shamo (gamecock).” Prior to the Great East Japan Earthquake, fish and shellfish from Haragama were used. This is a restaurant in which customers can enjoy the highest level of Fukushima ingredients praised by the best chef.
