The restaurant owner, who is from Kawamata Town, runs a small restaurant on a residential backstreet near the Komazawa Olympic Park. Exquisite items from Fukushima are the mainstays of the menu. The cuisine on offer includes charcoal-grilled Kawamata shamo (gamecock)/grilled dumplings, char bone flavored sake from Hinoemata Village, horsemeat sashimi of Aizubange, and soba from Yamatomachi, Kitakata City. Charcoal-grilled Kawamata shamo (gamecock) is offered with care. In order to make the taste of the ingredients stand out, all of the shamo with salt are offered without sauce. The owner is particular about spices, such as yuzu kosho (a condiment paste made from yuzu zest and chili peppers). In particular, liver with salt―I never experienced such texture and taste before. Kawamata shamo (gamecock) has been loved by regular customers for a long time.
