Rare high‐quality brands of Fukushima’s sake (such as Sharaku, Kanazawaya, and Toyokuni) have been brought to Tokyo. The restaurant owner is from Koriyama City. After the owner trained himself for 15 years in Uoshin noted as a seafood restaurant, became independent. Customers can enjoy fresh fish and an original menu of fish, such as kushiage (deep-fried skewers), in addition to fish sashimi.

The career of the restaurant owner is unique. After graduating from high school, he became a member of the Self‐Defense Forces. After he finished his term of service, he obtained a qualification as a physical therapist and worked in an osteopathic clinic. Incidentally, he started his career in the restaurant business, in which he had no previous experience. He became a manager as well as a member of the cooking staff. His judgments and skills he acquired for 15 years made everything go smoothly. Because of the personality of the restaurant owner, Uosui is loved by local people, so prior reservation is absolutely necessary. He is planning to procure Fukushima ingredients, such as Aizu vegetables, in the future.
